Although the coffee cake recipe is intended for a multicooker (I have a Scarlett SC-411, the power of the device is 700 W, the bowl volume is 4 liters), but this pastry can be prepared in the oven without any problems. I advise you to use a mold with a diameter of 22-26 centimeters, after greasing it with vegetable oil (if butter, be sure to sprinkle it with flour). The baking time depends on the features of the oven, but set the temperature to 175-190 degrees and bake on a medium level until dry.

To prepare a delicious and aromatic coffee cake, we will need the following ingredients: premium wheat flour, butter (fat content of at least 72%), large chicken eggs (about 50-55 grams each), granulated sugar, drinking water, unsweetened cocoa powder, instant coffee, baking powder and salt. For coffee taste and aroma, dissolve 1.5 tablespoons of high-quality instant coffee and 1 tablespoon of unsweetened cocoa powder in 100 milliliters of hot water (it will give the cake not only a light chocolate flavor, but also color). Of course, instead of instant coffee, you can use ground coffee to make a strong espresso. Mix everything thoroughly and let cool to room temperature.


I suggest making the dough for the future cupcake using a plenum mixer, but you can also use a hand mixer. In a bowl (deja) put 200 grams of soft (take it out of the refrigerator in advance) butter, add 200 grams of sugar.


Carefully grind the butter and sugar to obtain a relatively homogeneous mass. After this, add 4 large eggs one at a time (you can replace 5 medium-sized ones) - when one is completely mixed into the oil, add the next one.


As a result, you should have a delicate oil mixture that is fairly homogeneous. I beat everything with a mixer (whisk attachment) at high speed for about 5 minutes. Add cooled coffee and cocoa and mix it into the mixture.


Mix all the ingredients to make a smooth, airy and shiny cake batter. In general, cake dough, as a rule, is not kneaded for a long time so that the crumb of the finished product does not turn out dense and clogged, but there is quite a decent amount of baking powder, so the cake will be very tender and airy. The consistency of the dough is not very thick, but it holds its shape well - I collected it with a spatula towards the center and it did not spread.
